I shouldn't look at these on fast sndauy. Panchito in Cartersville made us chilaquiles the first time i ever had them and they weren't fried duros, and i loved them. I prefer them a little soft still. But panbazos or Laura's mole? Sweet sassy molassey that would hit the spot.

Why not just google free dtiebaic recipes'?You will get loads of sites that offer free recipes for dtiebaics.Pretty much they're all the same low carb, generally low fat, high protein.Also, you might not want to ignore nuts. Walnuts, pecans, etc. They are FULL of the good fats, and one cup of them can supply you with about 1/3 to 1/2 of your daily calories.I mix some of those into sugar free jello and add some sliced strawberries. Top it with whipped cream. Makes a really tasty treat, low in carbs, high in the good fats & protein.Your public library has a lot of dtiebaic cookbooks for you to see. Once you find a book or two, then go to say Waldenbooks or similar and buy the book(s). One other place to see is Dr Bernstein's all meat diet, or very low carb diets. Both of those are good for dtiebaics too. I believe that you can read most if not all online for free as well.

Servings: 10

1/2 cup water\\
1/4 teaspoon salt\\
1/4 cup (1/2 stick) butter\\
1/2 cup sifted flour\\
2 eggs

Heat oven to 400F. Combine water, salt and butter in saucepan. Heat to boiling. Remove from heat. Pour flour all at once into the hot mixture. Mix. Heat again. Stir quickly and cook until the paste leaves the sides of the pan. Remove from heat. Beat to cool. Add eggs one at a time. Beat after adding each egg until thoroughly mixed. Onto an ungreased baking sheet, drop by teaspoonsful in mounds. Bake 30-35 minutes or until puffed and slightly browned. Remove from oven. At once, cut a slit on the side of each puff. Cool on cake rack. When cool, cut off top.

Fill with tuna salad, crab salad, etc. Replace top.
