1/4 cup vegetable shortening
2/3 cup granulated sugar
2 1-ounce squares baking chocolate, melted
3 eggs, separated
1-1/2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1-1/4 cups milk
1/2 teaspoon vanilla
1/2 cup (2 ounces) chopped nuts

Preheat waffle maker according to manufacturer's directions.
In a large mixer bowl, cream shortening and sugar at medium-low until fluffy. Add chocolate and egg yolks. Beat well. Combine flour, baking powder and salt; add it to the chocolate mixture alternately with the milk. Mix well. Add vanilla and nuts. Stiffly beat egg whites. By hand, gently fold egg whites into chocolate mixture. Pour 1/2 cup batter over center of grids. Close waffle maker, bake about 2 to 2-1/2 minutes. (Follow directions with your waffle maker to gauge doneness.) Remove waffle and either keep warm or cool, depending on serving preference. (Waffle will become crisp as it cools.) Repeat with remaining batter.
Serve hot or cold with vanilla ice cream, chocolate syrup and nuts. Also good with sliced unsweetened strawberries.
