Pour into large bowl and chill, stirring occasionally, until mixture mounds slightly when dropped from spoon. Stir in 4 tablespoons lemon juice and peel.\\
In small mixer bowl, combine instant nonfat dry milk and iced water. Beat at high speed until soft peaks form (3-4 minutes). Add remaining 1 tablespoon lemon juice and continue beating until stiff peaks form (3-4 minutes longer). Fold whipped instant milk into pudding mixture. Spoon into crust. Chill until firm. Serve with fruit, if desired.
