1 envelope unflavored gelatin\\
1 package vanilla pudding and pie filling\\
1/4 cup sugar\\
2 cups liquid instant nonfat milk\\
5 tablespoons lemon juice\\
1/4 teaspoon grated lemon peel (optional)\\
1/3 cup instant nonfat dry milk\\
1/3 cup iced water\\
1 8-inch graham cracker crust

In medium saucepan, mix unflavored gelatin, pudding mix and sugar; blend in liquid instant nonfat milk. Let stand 1 minute. Cook over medium heat, stirring constantly, until mixture comes to a boil and gelatin is dissolved. Pour into large bowl and chill, stirring occasionally, until mixture mounds slightly when dropped from spoon. Stir in 4 tablespoons lemon juice and peel.\\
In small mixer bowl, combine instant nonfat dry milk and iced water. Beat at high speed until soft peaks form (3-4 minutes). Add remaining 1 tablespoon lemon juice and continue beating until stiff peaks form (3-4 minutes longer). Fold whipped instant milk into pudding mixture. Spoon into crust. Chill until firm. Serve with fruit, if desired.
