4 large baking potatoes
1 teaspoon shortening
6 tablespoons margarine or butter
2 tablespoons grated onion
1/4 teaspoon pepper
2 eggs
6 ounce (1-1/2 cups) shredded cheddar or American cheese
6 ounce (1 cup) diced, cooked ham
Paprika, if desired
Heat oven to 375F. Scrub potatoes; pat dry. Rub each potato with shortening; prick several places with fork. Bake at 375F. for about 1 hour or until done. Cut potatoes in half lengthwise; scoop out inside leaving a thin shell. Place shells on cookie sheet. In large bowl, beat potatoes 1 minute. Add margarine, onion, pepper and eggs; continue beating until mixture is smooth and fluffy. Fold in 1 cup of the cheese and ham. Fill potato shells with mixture; top with remaining 1/2 cup cheese. Sprinkle with paprika. Bake at 375F. for 15 to 20 minutes or until potatoes are thoroughly heated and cheese is melted.
Microwave Directions:  Scrub potatoes; pat dry.  Prick several places with fork.  Place potatoes on paper towel or in microwave-safe baking dish.  Microwave on HIGH for 14 to 19 minutes or until tender, turning potatoes over halfway through cooking.  Let stand 5 to 7 minutes.
Cut potatoes and prepare mixture as directed above; fill potato shells.  Place in 12 x 8-inch (2-quart) microwave-safe baking dish.  Microwave on HIGH for 4 to 6 minutes or until thoroughly heated.  Sprinkle with remaining cheese and paprika.  Microwave on HIGH for 1 to 2 minutes or until cheese is melted.
