Sauce:\\
1/3 cup firmly packed brown sugar\\
1 tablespoon cornstarch\\
1 teaspoon ginger powder\\
1 (4 ounce) can tomato sauce\\
1 tablespoon sherry\\
1/4 cup white wine vinegar\\
3 tablespoons water\\
Reserved juice from pineapple\\
1 tablespoon soy sauce

3 large chicken breasts, cut into chunks\\
1/2 tablespoon olive oil\\
1 red pepper or a combination of red, yellow or green, cut into strips\\
1/2 red onion, cut in thin strips\\
2 carrots, cut in rounds\\
1 (8 ounce) can pineapple chunks, drained, reserve juice

Put brown sugar in a medium bowl. Make sure there are no lumps. Add cornstarch and ginger powder. Stir to combine. Add tomato sauce and all other sauce ingredients. Set aside.\\
Brown chicken in olive oil. Add vegetables and pineapple. When juice is cooked away, add sauce.\\
Cook until thickened.
