Dearest Jennifer: I want you to know that you are truly an inspiration, and that your enthasiusm and desire to be healthy inspire people all over the world. Although you may not believe that, do a google search on Oxbow, Saskatchewan, SK Millions of women around the world struggle with weight issues, unhealthy life styles and poor eating habits. We sit back in our depressed state, praying that some day, we can be just like you. You have no idea how proud I am of you, not only for your accomplishments, but also, for your willingness to share your ideas, and help people like me who are stuck in a rut. Yes, I am lazy, and that is the reason I am in the position I am today. Time and time again, I have reached out to people to ask for help. To give me the tools to help me. And unfortunately, all too often, the outcome resulted in no response. Your life is busy, we can all see that, but that did not stop you from reaching out to a complete stranger, who you owe nothing at all. Every day, women are successful in losing the weight, but the stories are often kept as secrets from the rest of the world. You lay it on the line, and with you, I don't have to wonder what fad diet you are on, or what drugs or packaged food you have discovered that has changed your life. I cannot thank you enough for everything you have done for me. And I don't know how I will every repay you for taking time from your busy life to help a complete stranger who had hit rock bottom. My journey is far from over, and I know that this will be a life long journey of eating healthy and excercising . but I am no longer left wondering where the magic diet is hiding. I know what I have to do, and how to get there, and I have learned that only I can control how quickly that happens. Please continue to update with your story of your journey. The recipes are such a huge help to not only myself, but for the others who are silently following you to afraid to ask for help from anyone. You are a God Send .. and I mean that from the bottom of my heart. And, whenever I feel like giving up, it is not a picture of a model or a hollywood star or icon that keeps me going. It is YOU. Thank you for being real, and thank you for caring.

1/2 cup all-purpose flour or whole wheat flour\\
1/2 cup quick-cooking oats\\
3/4 cup buttermilk\\
1/4 cup milk\\
1 tablespoon sugar\\
2 tablespoons vegetable oil\\
1 teaspoon baking powder\\
1/2 teaspoon baking soda\\
1/2 teaspoon salt\\
1 egg

Beat all ingredients in a medium bowl with a hand beater until smooth. (For thinner pancakes, stir in 2 to 4 tablespoons of additional milk.)\\
Grease a heated griddle, if necessary, with shortening, using a pastry brush. (To see if griddle is hot enough, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.)\\
For each pancake, pour about 1/4 cup of batter onto the hot griddle.\\
Cook until pancakes are puffed and dry around edges. Turn and cook other sides until golden brown. Serve with applesauce if desired.

Note: Recipe may be quadrupled and extra pancakes frozen and reheated in the toaster.
