2 (3 ounce) packages peach jello
2 cups boiling water, divided
3/4 cup cold water
1 pint vanilla ice cream
1 (8-3/4 ounce) can sliced peaches

Dissolve one package gelatin in 1 cup boiling water. Add cold water. Chill until slightly thickened (gelatin will have the consistency of unbeaten egg whites). Dissolve second package gelatin in remaining boiling water. Add ice cream and stir until melted and smooth. Pour into serving bowl. Chill about 1 hour, or until set but not firm.
Arrange canned or fresh peach slices on gelatin - ice cream mixture.
Top with clear gelatin. Garnish with Cool Whip, if desired.
