2 heads garlic, cut in half crossways through clove\\
1 tablespoon oil\\
3-1/2 pounds potatoes, peeled\\
2 (4 to 5 ounces each) packages Reduced Fat Garlic & Herb Boursin cheese or Rondele Cheese\\
1/2 cup hot chicken broth or low-fat milk\\
1/3 cup minced chives\\
Fresh rosemary, thyme or oregano, optional

Bake garlic 40 to 45 minutes so it can be squeezed. Squeeze 3 halves of garlic.
Cut potatoes into chunks; boil 30 minutes. Mash potatoes with squeezed garlic and cheese with a mixer. Add broth as needed to keep smooth and creamy. Stir in minced chives. Garnish with remaining garlic halves, herbs and chives.
