8 ounce fresh mushrooms, sliced
1 small onion, diced
1/4 cup butter or margarine
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon poultry seasoning
1/4 teaspoon rubbed sage
1/2 teaspoon thyme
2-1/2 cups milk
1-1/3 cups sharp cheddar cheese, shredded
1 12 ounce pkg. tri-color rotini pasta, cooked
1 lb. cooked turkey, diced

Melt butter or margarine in a large saucepan over medium heat. Add mushrooms and onions and saute until tender. Blend in flour and seasonings. Gradually stir in milk until mixture thickens. Add 2/3 cup cheese and stir until melted. Add pasta and turkey and combine to coat.
Spread into a 9" x 13" baking dish and top with remaining cheese.
Bake at 400F. for about 25 minutes.
