6 slices bread, crusts removed, cubed
1 large potato, peeled and cubed
1/2 to 3/4 pound Italian sausage
8 eggs
2 cups milk
1/2 large onion, chopped
1 (4 ounce) can diced green chiles
2 cups grated cheddar cheese
2 cups grated monterey jack cheese

Layer bread cubes and potato in the bottom of a 13 x 9 x 2-inch pan. Brown Italian sausage; drain. Layer on top of bread and potatoes.
Mix together eggs, milk, onion, chiles, cheddar cheese and jack cheese. Add salt and pepper to taste. Pour over bread, potato and sausage. Cover. Refrigerate 8 hours or overnight.
Bake at 350F. for 1 hour. (If it is getting too brown, cover with foil for the last 10 to 15 minutes.)

Note: For a dish with a Spanish taste, add cumin and coriander. For a dish with an Italian taste, add basil and oregano.
